Couscous Salad



A filling salad that's ideal to pack in a lunchbox or enjoy as a quick dinner. This couscous salad is bursting with fresh Mediterranean flavors and is perfect for a light and satisfying meal.

Ingredients:

  • 1 cup couscous
  • 1 1/4 cups boiling water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup Kalamata olives, pitted and sliced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

Place the couscous in a large bowl

Pour the boiling water over the couscous, cover, and let it sit for 5 minutes

Fluff the couscous with a fork to separate the grains

Add the cherry tomatoes, cucumber, red onion, parsley, mint, feta cheese, and olives to the couscous

In a separate small bowl, whisk together the olive oil, lemon juice, salt, and pepper

Drizzle the dressing over the salad and toss to combine

Chill in the refrigerator for at least 30 minutes before serving
