Lemon Meltaway Cookies



These Lemon Meltaway Cookies have the perfect balance of buttery and zesty flavors, as well as a delicate melt-in-your-mouth texture. They're a delicious treat for any occasion thanks to their refreshing lemon flavor!

Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon lemon extract
  • 1 tablespoon lemon zest
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

Instructions:

Melt the butter and mix it with the powdered sugar in a large bowl until the mixture is light and fluffy

Mix the lemon zest and lemon extract into the butter mixture until everything is well mixed together

Add the all-purpose flour and salt slowly while mixing the ingredients together until a soft dough forms

Make two equal pieces of dough and roll each one into a log that is about 1 1/2 inches across

Put the dough logs in the fridge for at least an hour, or until they are firm

Warm your oven up to 350F 175C and put parchment paper on a baking sheet

Before putting the chilled dough logs on the baking sheet, cut them into rounds that are 1/4 inch thick

After the oven is hot, bake the cookies for 12 to 15 minutes, or until the edges are just beginning to turn golden

After taking the cookies out of the oven, let them cool for 5 minutes on the baking sheet before moving them to a wire rack to cool all the way down

You can add more powdered sugar to the cookies after they have cooled if you want to
