Ingredients:
- 2 cans 15 oz each butterbeans, drained and rinsed
- 1 cup cooked quinoa
- 1/2 cup finely chopped red onion
- 1/2 cup grated carrots
- 1/4 cup chopped fresh cilantro
- 3 tablespoons ground flaxseed mixed with 6 tablespoons water flax egg
- 2 tablespoons nutritional yeast
- 1 tablespoon tamari or soy sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Gluten-free burger buns
- Toppings: avocado slices, lettuce, tomato, vegan mayo
Instructions:
Put the flax egg, nutritional yeast, tamari, smoked paprika, garlic powder, salt, and pepper in a food processor
Add the butterbeans and pulse until everything is well mixed
Pulse the ingredients until they stick together but still have some body
You can make burger patties out of the mixture and put them on a tray lined with parchment paper
Put the patties in the fridge for at least 30 minutes to make them firm
Warm up the grill or BBQ over medium heat
The burgers should be grilled for four to five minutes on each side, or until they have a nice char and are hot all the way through
Put the gluten-free burger buns on the grill and toast them for one to two minutes
To make the burgers, put the grilled patty on the bun and top it with avocado slices, lettuce, tomato, and vegan mayo
Serve your Superfood Butterbean Burgers right away and enjoy them!
