Ingredients:
- 1 can 28 oz crushed tomatoes
- 3 cups vegetable broth
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil leaves
- 2 cloves garlic, minced
- 1/2 onion, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup heavy cream optional
Instructions:
In a large pot, heat olive oil over medium heat
Add chopped onion and minced garlic, cook until softened
Stir in crushed tomatoes and vegetable broth
Simmer for 20 minutes, stirring occasionally
Add grated Parmesan cheese and chopped basil leaves, stir until cheese is melted
Season with salt and pepper to taste
For a creamier consistency, stir in heavy cream optional
