Secret Tomato Basil Soup



This secret tomato basil soup recipe combines the richness of heavy cream with the freshness of basil to make a soup that is perfect for any event.

Ingredients:

  • 1 can whole tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup fresh basil leaves
  • Salt and pepper to taste

Instructions:

In a pot, heat olive oil over medium heat

Add chopped onion and minced garlic, cook until softened

Add canned tomatoes with their juices, breaking them apart with a spoon

Pour in vegetable broth, bring to a simmer, and cook for 10 minutes

Stir in heavy cream and fresh basil leaves, simmer for an additional 5 minutes

Season with salt and pepper to taste

Blend the soup until smooth using an immersion blender or transfer to a blender

Serve hot, garnished with additional basil leaves if desired
