Ingredients:

  • 1 lb Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 lemon, zest and juice
  • Salt and pepper, to taste
  • 1/4 cup pine nuts

Instructions:

Preheat the oven to 400F 200C

In a large bowl, toss the Brussels sprouts with olive oil, minced garlic, lemon zest, lemon juice, salt, and pepper until well coated

Spread the Brussels sprouts out in a single layer on a baking sheet

Roast in the preheated oven for 20-25 minutes, or until the Brussels sprouts are tender and lightly browned, stirring halfway through

While the Brussels sprouts are roasting, toast the pine nuts in a dry skillet over medium heat until lightly golden, about 3-5 minutes, stirring frequently

Remove the Brussels sprouts from the oven and transfer them to a serving dish

Sprinkle the toasted pine nuts over the roasted Brussels sprouts

Serve hot and enjoy!
