- 5 lbs boneless, skinless chicken breasts, diced
- 1 cup orzo pasta
- 8 cups chicken broth
- 1 onion, finely chopped
- 3 carrots, sliced
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 2 teaspoons dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1/2 cup fresh lemon juice
- 2 tablespoons fresh parsley, chopped
- Salt to taste
Instructions:
The slow cooker should have orzo, chicken broth, onion, carrots, celery, garlic, oregano, thyme, and black pepper
The chicken should be cut up
Mix the ingredients together well
On low heat, cover and cook for 6 to 8 hours, or until the chicken is done and the vegetables are soft
Add chopped parsley and fresh lemon juice about 30 minutes before they are served
Add salt to your liking
